| Dan Thiessen, chef/co-owner
Dan Thiessen, a native of Washington State, was raised on a cattle ranch in Eastern Washington before he attended the Culinary Institute of America, trained in Switzerland and worked in some of the highest profile restaurants in Seattle.
One of Seattle’s most sought after philanthropic chefs, Dan contributes his skills to numerous local charities such as the YWCA Family Village, FareStart and The American Liver Foundation. His involvement in organizations includes the Washington State Chef’s Association, and local culinary schools.
Dan’s food expertise has been published on the cover of the Savor Seattle Cookbook, Where Magazine, Nations Restaurant News, The Seattle Times, Seattle Magazine and Seattle Weekly. He also is the host of “What’s Cooking with Chef Dan” on KVI 570 Talk Radio from 11:00 ‘til noon every Saturday and has appeared on KOMO TV’s Cooking Segments and on KONG –TV, KING-TV and KCPQ-TV.
He recently accepted the honor from the Puget Sound Business Journal as one of 40 under 40 successful business and philanthropic leaders of the Seattle community. He was also honored for his work as an Outstanding Community Partner from South Seattle Community College. email: Chef Dan | |  |
|  | Matthew Bomberger, cfo/co-owner
Behind the scenes, Matt manages the financial wellbeing of the restaurant and drives the marketing and technology supporting the operations. He brings a strong background in business development and management to the Twisted Cork Wine Bar & 0/8 Seafood Grill. His passion for wine lead him to develop this venture with Chef Dan, providing a wine and food experience as it is meant to be: a sensory exploration in a spirited environment with excellent service.
Previously working in business development for high tech companies such as Microsoft and AT&T Wireless, Matt brings a savvy sense of technology and strong management skills to this new restaurant project. In former positions he coordinated vendor partnerships and created new programs and methods while enhancing revenue streams.
Receiving both a B.A. and B.S. degree from the University of Notre Dame, Matt also holds an MBA from the University of Chicago. Matt volunteers as a member of the Board of Directors and Chair of Investments for the Koch Foundation, and serves as a Member of the College of Arts and Letters Advisory Council for his undergraduate alma mater. | |  |

Scott is responsible for all day-to-day operations of the restaurant, working closely with co-owners Dan Thiessen and Matthew Bomberger and Beverage Director Michael Anderson.
Originally from Oklahoma, Wilson relocated to Los Angeles before moving to Seattle 14 years ago. The self-taught Wilson has spent over 20 years in the hospitality industry, starting when he was 21 working as a bartender and waiter in order to put himself through college. While in Seattle, Wilson spent eight years with the Kimpton Group, first as bar manager at Tulio Ristorante, then helping to open Sazerac, where he worked as beverage director. Wilson then re-opened the re-vamped Frontier Room before most recently working at Twist.
When long-time friend Thiessen approached him about a move to the Eastside, Wilson welcomed the new challenge. Under Wilson’s direction, Tulio Ristorante received recognition for its award-winning wine list, and Sazerac was voted “Best Bar Staff in Seattle” by Food & Wine magazine.

 Michael Anderson, beverage director
As Beverage Director, Anderson is responsible for all liquid refreshment at 0/8 and Twisted Cork, from water and soft drinks, to beer, spirits and cocktails, to the property’s already impressive wine program.
A Seattle local, the self-taught Anderson has spent the past 18 years in the wine wholesale business, both selling and as a manager, most recently with respected purveyors Alaska Distributing and G. Raden and Sons. Prior to his wine career, he spent 16 years in the local restaurant industry, making him unusually well versed in all aspects of the food and beverage business.
